I was so completely hooked on the Olympics over the weekend! I love everything about the Olympics...the nail biting competition, the human interest stories, and mostly the unity that the games can only bring. I went to the summer Olympics in Atlanta and I would love nothing more than to be in London! However, since I have to live the Olympics vicariously through TV, I decided to put together an Olympic inspired outfit :)

Mojito Inspired

The mojito is one of my all time favorite summer drinks! Living in South Florida, the mojito is a very common menu item. There are so many variations, but my favorite kind is the classic mojito with lots of lime and mint...so refreshing!
The mojito is the inspiration behind these bright green finds!

So this Pinterest collection was a little random at best, but variety is the spice of life, right?! Have a great Wednesday sweet friends!  

Peanut Butter, Pretzel and Chocolate Chip Cookies

Peanut Butter. Pretzels. Chocolate Chip Cookies. These are three of my all time favorite foods and their combination is just perfect - sweet and salty. Well when I saw these Chocolate Chip Pretzel Bars on Food & Wine's site, I knew I had to make them. 

I made two small adjustments to the original recipe. I added 2 tablespoons of peanut butter (you can never go wrong adding peanut butter!) and instead making of bars, I made the cookies in a muffin tin. It is one of my favorite twists on the traditional cookie because the center is always so soft! 




Ingredients: 

  1. 2 cups all-purpose flour
  2. 1 teaspoon baking soda
  3. 1/2 teaspoon salt
  4. 1 1/2 sticks unsalted butter, softened
  5. 1 cup light brown sugar
  6. 1/2 cup sugar
  7. 2 large eggs
  8. 2 teaspoons pure vanilla extract
  9. One 12-ounce bag bittersweet chocolate chips
  10. 1 1/2 cups mini pretzels, coarsely chopped
  11. 2 tablespoons creamy peanut butter
  12. Steps: 
  13. Preheat the oven to 375°. 
  14. In a bowl, whisk the flour, baking soda and salt. In a large bowl, using a mixer, beat the butter with both sugars at medium speed until light, 1 minute. Beat in the eggs and vanilla. At low speed, beat in the dry ingredients. Stir in the peanut butter, chips and pretzels.
  15. Add batter to the muffin tin. Bake for 17-20 minutes, until golden; the center will still be a little gooey. Transfer the pan to a rack and let cool completely.
  16. Run the tip of a knife around the side of the individual muffins and lift out of the tin.

Summer Wedding Fashion

Happy Friday everyone! This week seemed to be so much longer than most because of last week's mid-week break! Definitely thankful it is Friday!
Today I put together my dream outfit to wear to an evening summer wedding for Friday's Fancies. I love the neon and neutral color combination of this dress and the cut is so romantic. 
I have been eyeing it for some time on Rent the Runway which is definitely my favorite source for wedding outfits!

Color Crush: Navy, Pink & Mint

Navy, pink and mint make up one of my favorite color combinations. Navy is such a great substitute for black and I love the brightness that pink and mint add. This weekend I paired my navy maxi dress with the pink sweater and mint necklace below...definitely my new summer uniform!

Simple Changes

I am a firm believer that simple and quick changes around the house can add a fresh, new feeling with out having to completely overhaul a room. This weekend I made some simple changes in our house that made a big impact.

The first change was to update the previously blah background on my Mac. I found this cute desktop background on Kate Spade's tumblr page. The splash of color instantly freshened up my office, given my Mac is almost always open! 

The next change was the addition of these basil and sage plants. I have always wanted to have my own "herb garden" and this is the first step. This was a DIY project using two planters that I already had and chalkboard contact paper.  I am not going to lie, chalkboard contact paper is amazing! I just cut out squares and placed them on the white planters. It was so easy! You can find similar planters at Crate and Barrel.

And the final change was inspired by a recent Pottery Barn catalog. They added starfish to lanterns with candles. I have these two lanterns in my family room and I added a large starfish to each one.

It's such a simple and easy change, but it ties in the vintage island look that the rest of the room has.

Stars and Stripes

Hi friends! Hope your 4th of July was fantastic! I still feel slightly discombobulated from the holiday being in the middle of the week, but I will take a holiday any day! Below are some pictures from our family holiday celebration. 
I just love all of this red, white and blue! My mother in law did such an awesome job decorating our dinner table, she is so gifted!

This weekend Kris and I are planning on painting our dining room (pictures to come!) as a part of our summer bucket list.  Have a wonderful weekend! xo

Today we are going to my mother and father in law's house for a barbecue and I am planning on making these two desserts (1, 2) that I found on Pinterest. Definitely hoping they work out since it is my first time trying the recipes! Slow Cooker Brisket & Brie Quesadillas

I love when a recipe allows it to look like you spent all day cooking, when in fact you spent less than 45 minutes in the kitchen. This Slow Cooker Brisket and Brie Quesadilla recipe was just that.The combination of the brisket, sweet barbecue sauce and brie was perfection! 

Home made barbecue sauce. The original recipe calls for a mango chutney as well, but I left that out. I am allergic to mango sap (something I found out the hard way after moving to South Florida) and didn't want to risk it.
